This chopped sandwich that became a viral sensation finally caught my eye. I had to try it and I’m glad I did. You get every ingredient in every bite! I made it my way with ingredients I love to use. Now, this isn’t how I would make all my sandwiches moving forward but this is a great option. This chopped Italian sandwich recipe is a great way to make sandwiches for a large party. This sandwich is to taste, so add as much or as little of the ingredients to the mixture.
CHOPPED ITALIAN SANDWICH

Ingredients
Pancetta, cubed and cooked until crispy
Romaine lettuce
Radicchio
Cherry tomatoes
Red onion
Castelvetrano olives, pitted
Bomba sauce
Peperoncini peppers, stems removed
Provolone, mild
Asiago, aged
Parmigiano-Reggiano
Prosciutto cotto
Genoa salami, mild
Soppressata, hot
Mortadella
Salt
Freshly cracked pepper
Dried oregano
Extra virgin olive oil
Red wine vinegar
Mayonnaise
Bread of choice
Method
1. In a frying pan over low-medium heat, add pancetta and cook until it starts to render and get crispy. Once cooked, remove to a plate lined with paper towel. Set aside.
2. On a large cutting board, add romaine lettuce, radicchio, cherry tomatoes, red onions, olives, bomba sauce, peperoncini, provolone, asiago, Parmigiano-Reggiano, prosciutto cotto, mild salami, hot soppressata and mortadella. With a knife chop all of the ingredients, mixing them together as you continue to chop. Chop until they're all bite sized pieces. Then add extra virgin olive oil, red wine vinegar, mayonnaise, oregano and season with salt and freshly cracked pepper. Continue to chop and mix until everything is combined.
3. Scoop mixture into your bread of choice and enjoy.
