Brussels Sprouts Sandwich? come again. Yes, a brussels sprouts sandwich. You know, everything deserves to be sandwiched between two pieces of bread and brussels sprouts are getting some love in this recipe. I was just trying to do something different with brussels sprouts. Did it work? SURE DID!
BRUSSELS SPROUTS SANDWICH

Serves 4
Ingredients
2 tbsp extra virgin olive oil
2 tbsp butter
½ lb brussels sprouts, thinly sliced (mandolin) or chopped
2-3 hot sausage, casing removed and broken up into small pieces
Salt
Freshly ground pepper
Juice of ½ lemon
4 brioche buns, sliced and toasted
150g gruyere cheese, shredded
½ cup dijonnaise
Method
Dijonnaise
1. Whisk together 2 parts mayonnaise to 1 part Dijon mustard, depending on your taste. You can add a bit of grainy mustard as well for extra flavour and texture.
Sandwich
1. In a large skillet over medium heat, heat extra virgin olive oil and butter. Add sausage and sauté until half cooked, about 2-3 minutes. Add Brussels sprouts and season with salt and freshly cracked pepper. Sauté until everything is cooked, about 4-5 minutes. Once done add lemon juice and mix.
2. Lay toasted brioche bun on work surface and add brussels sprouts and sausage mixture to the bottom half of the brioche bun. Add a small handful of gruyere cheese and place in a toaster oven or broiler to melt the cheese. Spread a small dollop of dijonnaise on the top half of the brioche bun and enjoy!
