Cottage Cheese Dip

This cottage cheese dip is the perfect easy appetizer! Blended until smooth and topped with a rich Italian-style tomato mixture, it’s a delicious balance of fresh, tangy, and herby goodness. Serve it with crusty bread, crackers, or veggies. Simple ingredients, big flavor!

COTTAGE CHEESE DIP WITH TOMATO AND OLIVE TOPPING

Serves 4-6
Ingredients
Cherry tomatoes, to taste, halved or quartered
Castelvetrano olives, to taste, pitted and chopped
Peperoncini, to taste, stems and seeds removed, chopped
Red onion, to taste, finely chopped
Fresh basil, to taste, torn
Salt, to taste
Freshly cracked pepper, to taste
Extra virgin olive oil, to taste
Balsamic glaze, to taste
Cottage cheese, I used 500g, strained optional
Bomba sauce, to taste
Parmigiano-Reggiano, finely grated, to taste
Method
In a bowl add tomatoes, olives, peperoncini, onion, basil and season with salt, freshly cracked pepper, a drizzle of extra virgin olive oil and balsamic glaze. Mix everything together and taste and adjust seasonings.
2. In a food processor, add cottage cheese, bomba sauce, a drizzle of extra virgin olive oil, Parmigiano-Reggiano and season with salt and freshly cracked pepper. Pulse to the constancy that you prefer, super smooth or a bit chunky. Once done remove to a bowl, add the topping mixture and serve with crispy bread, crackers or veggies.
