Leftover Turkey Sandwich

I'm a big fan of leftovers—it's like giving your food a second chance to shine. When it sits in the fridge overnight, it has time to develop even richer flavors, plus you get a ready-made second helping. Today, we're putting leftover turkey to good use—yes, turkey! One of the easiest and most delicious ways to enjoy it is in a sandwich, and that's exactly what we're making today. But don't worry if you don’t have any leftovers; you can still make this sandwich with fresh turkey and enjoy it just as much. Like most of my sandwich recipes, go by your tastes with the ingredients.


LEFTOVER TURKEY SANDWICH WITH BRUSSELS SPROUTS SALAD AND BALSAMIC GLAZE MAYO

Serves 1


Ingredients

Brussels sprouts, shaved thinly, to taste

Red onion, cut into thin strips, to taste

Sharp provolone (piccante), finely grated, to taste

Extra virgin olive oil, to taste

Lemon juice, to taste

Chili flakes, to taste

Salt, to taste

Freshly cracked pepper, to taste

Mayonnaise, to taste

Balsamic glaze, to taste

Brioche bun, buttered and toasted

Turkey, shaved, sliced, preferably leftover, to taste


Method


  1. Place brussels sprouts, red onion, provolone in a bowl. Season with extra virgin olive oil, lemon juice, chilli flakes, salt and freshly cracked pepper. Give everything a mix, taste and adjust any seasonings. Set aside


2.  For the balsamic glaze mayo, combine mayo and balsamic glaze. Mix to combine and set aside in the fridge. Adjust the ratio to your tastes. I usually do a 2 to 1 ratio of mayo to balsamic glaze.


3.  Lay toasted brioche bun on work surface. Add balsamic glaze mayo and then turkey pieces. Add the Brussels sprouts salad on top. Spread a generous amount of balsamic glaze mayo on the top half bun. Enjoy!
