MUSHROOM SANDWICH WITH CARAMELIZED ONIONS, PROVOLONE AND ARUGULA

Serves 1-2
Ingredients
250-300g mixed mushrooms, cleaned, sliced or chopped
White wine, just a splash to deglaze the pan
Extra virgin olive oil, to taste
Fresh thyme, finely chopped, to taste
1-2 garlic cloves, thinly sliced or chopped
Bomba sauce, to taste
Salt, to taste
Freshly cracked pepper, to taste
1-2 medium Vidalia onions, sliced
Unsalted butter, to taste
Arugula, to taste
Lemon juice, to taste
Provolone cheese, sliced, to taste
Bread, your choice, sliced and toasted (optional)
Method
Heat a large pan over high heat. Add mushrooms and let cook, undisturbed. After about 5-10 minutes give a stir and leave again for another 5 minutes, undisturbed. You want to release as much moisture from the mushrooms as you can. Once the mushrooms have started to brown and most of the moisture has been released, deglaze with white wine, extra virgin olive oil, fresh thyme, garlic, bomba sauce and season with salt and freshly cracked pepper. Continue to cook down a bit more and then remove and set aside.
In a pan on medium heat, drizzle a little bit of extra virgin olive oil and add onions along with butter and season with salt and freshly cracked pepper. Mix to coat. Leave undisturbed for 4-5 minutes to start the browning process. Adding a splash of water can help speed up the cooking process. This process will take anywhere from 30-40 minutes, depending on personal preference, so check and stir often so the onions don’t stick to the bottom of the pan and burn. Once the onions are done, remove and set aside.
In a bowl, add arugula, extra virgin olive oil, lemon juice and season with salt and freshly cracked pepper. Give a mix. Prepare this right before building your sandwich so the arugula doesn’t wilt too much.
Lay sliced and toasted bread on your work surface and add mushrooms, caramelized onions and the provolone cheese. Place the sandwich open faced under the broiler so the cheese can melt. Once cheese has melted, add dressed arugula on top. Enjoy!
