Sweet potato mash with Gorgonzola cheese! This creamy sweet potato mash is a different twist on the mashed potatoes we all know and love. The Gorgonzola adds a wonderful flavour and compliments the sweet potato perfectly. If you aren't too fond of blue cheese just give this recipe a chance because Gorgonzola is creamier and not as sharp as some other blue cheese varieties.
SWEET POTATO MASH WITH GORGONZOLA CHEESE

Serves 4
Ingredients
3.5 lbs sweet potatoes, peeled, cut into small bite size uniformed chunks
extra-virgin olive oil, to taste
Salt , to taste
Freshly cracked pepper, optional
1/3 cup of butter
125g of Gorgonzola, crumbled (subs: any creamy blue cheese)
Method
1. In a large enough pot, place a steamer basket and fill enough water to just reach about 1 inch below the basket. Add your sweet potatoes into the steamer basket and bring water to a boil. Once the water is boiling, cover the pot, reduce the heat to medium and steam the potatoes until you can pierce a knife through easily. Depending on the size of your potatoes it could take anywhere from 20-30 minutes. Remove the potatoes from the steamer basket and pour out any leftover water. Add the potatoes back to the same pot and add extra virgin olive oil, salt, butter, freshly cracked pepper (optional) and mash to a smooth consistency. You can add more of the ingredients depending on your tastes.
2. When potatoes are mashed to your liking you can now add the crumbled Gorgonzola and fold it in. The residual heat will slowly melt the cheese but not fully. You will get little “pops” of gorgonzola pieces. If you wish to melt the cheese fully, just add with the other ingredients. Add mashed potatoes to a serving dish and finish with a drizzle of extra-virgin olive oil, freshly cracked pepper and crumbled Gorgonzola on top. Enjoy!
