Swiss Chard and Cannellini Beans

There’s something about picking Swiss chard straight from the garden that brings back memories. Swiss chard with creamy cannellini beans and flavorful sardines. It’s a combination that turns a few pantry staples into a hearty and nutritious meal. This recipe is proof that good food doesn’t have to be complicated. 



SWISS CHARD WITH CANNELLINI BEANS, GARLIC, CHILI AND SARDINES

Serves 2-4


Ingredients


Extra virgin olive oil, enough to fill the pan

2 garlic cloves, sliced or finely chopped

Chili flakes, optional, to taste

Tomato paste, small squeeze

1 bunch Swiss chard, ends trimmed, leaves removed from stalks, stalks and leaves chopped

Salt, to taste

Freshly cracked pepper, to taste

Cannellini beans, 1/4 to 1/2 a can, rinsed and drained

Red wine vinegar, just a splash

1 can sardines

Bread for dipping


Method


  1. In a medium sized pan on medium heat, add extra virgin olive oil, garlic and chilli flakes. Saute until garlic is tender and fragrant. Create a hot spot and add a small amount of tomato paste, cook it out. Then mix into oil and garlic. 


2.   Add Swiss chard stalks and cook until tender. Add the leaves and sauté until wilted and cooked. Season with salt and freshly cracked pepper. Add beans and a splash of red wine vinegar. Mix until everything is warmed through. Plate it up and top with sardine fillets and a drizzle of extra virgin olive oil and serve with bread.
