Tuna Salad Sandwich

You can never go wrong with a classic sandwich recipe and the tuna sandwich is very high on the list. There are so many recipes out there for tuna salad and this one is mine that I hope you enjoy. It hits all kinds of flavour profiles and I even add chips! I know I’m not alone on this one. I also show you a simple way to make your own tuna, yes, make your own tuna, and after you see how easy it is, you may be ditching the canned stuff.

TUNA SALAD SANDWICH

Serves 4


Ingredients

Salt

1 lb Tuna, ahi, yellowfin, big eye, mahi, albacore all work or 4 cans of tuna, drained

Olive oil, enough to cover tuna

Whole peppercorns, to taste

2 Garlic cloves, smashed

2 lemon peels

4-5 sprigs of fresh thyme

Chili, to taste


40g or ¼ cup red onion, finely diced

50g or 1/3 cup castelvetrano olives (pits removed), finely chopped

1-2 fresh pepperoncini, seeds removed, finely chopped

1-2 fresh calabrian chilis, seeds removed, finely chopped

45g or 1 stalk celery, finely diced

100g or 1/3 cup bread and butter pickles, finely chopped

6g or 1 tbsp. fresh tarragon, finely chopped

6g or 1 tbsp. fresh dill, finely chopped

6g or 1 tbsp. fresh parsley, finely chopped

Juice of 1 lemon wedge

100g or ½ cup mayonnaise

15g or 1 tbsp Dijon mustard

Regular kettle chips, to taste


Method

1. Generously salt both sides of the tuna steaks and let sit while you prepare the oil. Fill a pot with enough olive oil to cover the tuna steaks. Add the garlic, peppercorns, lemon peels, fresh thyme and chili. Bring the oil up to 160 degrees and let sit for about 10 minutes so the aromatics infuse into the oil. Then bring the oil down to 150 degrees doing your best to keep that oil at that temperature the whole time the tuna cooks. Add the tuna steaks and leave the tuna steaks to poach for about 20 minutes or until the internal temperature reaches 150 degrees, flipping halfway through. Remove and add the tuna to a bowl and flake with a fork, adding a few drizzles of the oil.


2. Add the rest of the ingredients to the tuna and mix to incorporate everything. Build your sandwich by spreading mayo on both slices of bread, toasted is optional. Add as much tuna as you like, add the chips, which are also optional and enjoy!
