Whipped Feta Dip

Whipped feta dip is so good on it's own but I made a delicious condiment sauce to go with it that makes this dish even better. If you are looking for another way to use up feta cheese try this recipe.

WHIPPED FETA DIP (with parsley and pine nuts)

Serves 4


Ingredients

250 grams feta, crumbled

125 grams cream cheese, softened

1 tbsp lemon juice, freshly squeezed

Freshly cracked pepper, to taste

¼ cup extra virgin olive oil

1 tbsp water (or more)


Topping

1/4 cup fresh parsley, finely chopped

1 tsp chili flakes

2 tsp dried oregano

1/4 cup pine nuts, toasted

zest of ½ lemon

Salt, to taste

Freshly cracked pepper, to taste

Extra virgin olive oil


Method

1. In a large dry frying pan over medium heat, add pine nuts and toast for 3-4 min or until golden brown. Place in a bowl or plate and set aside.


2. For the topping - In a medium sized bowl add parsley, chili flakes, oregano, toasted pine nuts, lemon zest, extra virgin olive oil and season with salt and freshly cracked pepper. Mix and set aside.


3. For the dip - Add feta, cream cheese, lemon juice, extra virgin olive oil and a pinch of freshly cracked pepper into a food processor fitted with the steel blade. Pulse until everything is mixed and smooth. Adding water helps thin out the dip, depending on how smooth you like it.


4. Transfer to a serving bowl and use a small spoon to create a swirl on the surface of the dip. Drizzle the topping mixture over the dip and serve with pitas, chips, crackers or whatever you like. Enjoy!
