Sausage Breakfast Burger

This sausage breakfast burger is either going to kick start your day and get you out of bed, or put you right back in it. Using the sausage as the patty is a great way to save time, but not on flavour. Sausages are already made with so much flavour and for this burger it doesn’t matter what flavour you get, just get the one you love. I love this breakfast burger anytime time of the day. I leave you with one question, does a fried egg make everything better?

SAUSAGE BREAKFAST BURGER WITH FONTINA, AVOCADO, BOMBA MAYO & A FRIED EGG

Serves 2


Ingredients

1 medium-large avocado

Juice of ½ lime

Salt

Freshly cracked pepper

2 tbsp. of mayonnaise

2 tbsp. of bomba sauce

50-60g Fontina cheese, coarsely grated

1 or 2 hot or mild pork sausage, casing removed (4oz patties)

2 Brioche buns, sliced, toasted

2 tbsp. unsalted butter

2 eggs


Method

1. In a bowl add the avocado along with the lime juice and season with salt and freshly cracked pepper. Mash with a fork until your desired consistency. In another bowl, whisk together mayonnaise and bomba sauce, adding more mayonnaise or bomba sauce, depending on your taste. Place both bowls in the fridge or set aside. Cover the avocado mash with plastic wrap to help prevent browning.


2. Remove the sausage from the casing and form sausage into 4oz patties. Place in a large skillet over medium heat and cook each side for 3-4 minutes per side. Once you flip the patty add the cheese on top and let melt while finishing cooking the sausage patty. You can cover the pan with a lid to help melt the cheese even more. Remove patties to a plate and in the same pan, toast the brioche buns.


3. In a large frying pan over medium heat, heat 1 tbsp. butter per egg. Crack the egg into the melted butter and fry until the egg whites are completely set. You can cover the pan partway through cooking and let the heat and steam gently cook the top of the egg, making sure the yolk remains runny. Season egg with salt and freshly cracked pepper. Set aside. Enjoy!


4. Lay toasted brioche bun on work surface. Spread a dollop of avocado mash on the bottom half of the bun. Add sausage patty on top. Add the fried egg and spread a generous amount of bomba mayo on the top half bun. Enjoy.
